On Saturday, January 9th, around 12 members of the IHSI Winemaking Club gathered to rack the wine barrels at the home of Carol Morotti and Scott Westphal in Rocky Ripple. The process consisted of siphoning off the top, clarified wine and then filtering it into a new, clean barrel. That leaves the sediment at the bottom of the barrel which was rinsed out, giving us a clean barrel to use for the next round. At the end of it all, we have 3 full barrels of clarified Sangiovese wine. This wine will now age for another 3 months before we are ready for bottling in the spring!
